I was playing soccer with my friends the other day and I was playing goalie. One of the players on the other team kicked the ball and I stopped it and was holding it to the ground with my hand solidly but then one of their other players kicked it in the goal. There was a big argument on it and it decided on the outcome of the game. Is that legal? How much possession does the goalie need to have in order for the opposing team to not touch it?

You have control of the ball, and until you lose possession of the ball with your hands (i.e. kicking or throwing it), no player can take the ball away from you.
